DETAILS

Cherries are fed through a pulper into a fermentation tank. Once they have been fermented (thereby removing the mucilage layer) after 24-72 hours, they run through cement chutes, agitated using wooden rakes to prepare the coffee for curing in drying beds. Once moisture has reached 10-12% the seeds in parchment are moved to storage to await export.
