The Valiant Way is a simple one: Be Excellent. This principle is one that permeates every aspect of our lives. Both in and out of the roastery, in our homes, in our relationships, in all that we do, our aim is to Be Excellent.
Before focusing in on our method and mindset for production, it helps to know a bit about the coffee journey. From flower to cherry to bean to cup, the coffee journey can take up to a year (sometimes longer!). As roasters, we recognize that the 9-12 minutes these beans are rolling around in the roasting drum represents less than 1% of the entire coffee lifespan. It is in this narrow window that we are allowed to contribute our craft in an enormously collaborative effort focused on creating an Excellent coffee experience for you, your friends, and family.
We take every step necessary to be good stewards of this precious commodity. Careful handling, processing, roasting and bagging; all contribute to an exceptional experience we know you will identify and enjoy each and every time you brew a cup.
Here is how we ensure this is possible. We roast all batches by hand, closely monitoring bean temperatures, airflow, and gas pressure. We make micro adjustments throughout the progression of the roast, depending on the bean, and ensure each batch is perfect. We cup every week taking random samples of batches to make sure they are up to snuff. All bags, are stamped, formed, filled and closed by hand. This means not a single bag goes out our doors without it being crafted by one of our crew. We make our own labels, so we can modify tasting notes, and details season to season. The date on the bag is the date it came out of the roaster, not when it should be consumed by.

This is me, @cardboard.erik back in 2015. In the early days, I did everything the hard way. All of our green coffee bags were schlepped by hand, all of our batches were scaled out by scoop, all of the roasting was done by adjusting little levers and knobs and our roast logger was an accounting binder with all the variables logged live as I roasted.

When we named our business, we chose this name because it symbolized what we wanted to become. Even though we didn’t consider ourselves “valiant” we knew and believed with time and persistence, we could become Valiant.
